Soup with millet

Here's a nourishing soup recipe that features millet:

Millet Vegetable Soup

Ingredients:

  • 1 cup millet, rinsed
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes (with juice)
  • 6 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions:

  1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

  2. Add Garlic and Spices: Stir in the minced garlic, dried thyme, and paprika. Cook for another minute until fragrant.
